The fruit for this 100% Catarratto is picked early to retain acidity and freshness resulting in bright, crunchy and satisfying wines. The fruit goes through a short maceration on the skins, lending an extra element of grip to the wine, and also contributing to the faint amber hue in the color of the wine. The resulting wine is full of flavor; golden apple, quince, dandelion and salt, with plenty of refreshing acidity. This is a very unique wine that also happens to be highly drinkable and delicious.
