When the team at Subject to Change was offered the opportunity to make organically farmed, zero sulfur California Cab, they couldn't pass it up. The fruit was sourced from high-quality vineyards in Carneros, and the wine comes in at a wildly low 11.4% alcohol, which is almost unheard of for Cali Cab. Light and vibrant on the palate with mixed peppercorns, currants, white floral aromatics, and a long finish. It's not what you'd exactly expect from a Cali Cab, and maybe that's a good thing? Drinking great now, but it's built to age.
