100% Pecorino. This is an underrated and rarely seen white wine from Central Italy. Clean, crisp, aromatic, with notes of green fruit, honey, citrus, and a little earthiness. It is medium bodied, slightly dry, and mildly acidic. Pair it with cured meats and cheeses, white fish, grilled cheese, or your favorite vegetarian dish.
